Guilty-Free American Style Healthy Pancake Recipe


Anyone who's eating healthily will be annoyed with pancake day (Shrove Tuesday) tomorrow...am I right? Well they don't need to be made with flour, eggs, sugar and all the other stuff that's not good for us. This recipe resemble the thickness of American style pancakes and are very filling.

Two Ingredient Pancake Recipe for One (5 min prep, 5 min cooking time - approx)

Ingredients
For the Pancake
  • 1 medium egg,
  • 1 tablespoon of almond milk, or any other milk
  • Half of a medium banana
  • 1 teaspoon of cinnamon powder
  • 1/4 teaspoon of coconut oil, (or butter)
 Optional Toppings
  • The other half of a medium banana, sliced
  • Dark chocolate (70%)
  • 1 teaspoon of Nutella
Method
  • First you will start by making  dark chocolate shavings by getting an old knife at a 45 degree angle to the surface of the chocolate so it scrapes a thin later of shavings as you push: 
  • In a bowl break half the banana and add a tablespoon of almond milk, then mash with a fork until the big lumps have gone:
  • Add the egg - if you want a healthier version omit the yolk and use egg whites from 2 medium eggs, add cinnamon and whisk.
  • Put the gas on to a low/medium temperature, add a 1/4 of a teaspoon of coconut oil in a small non-stick pan and swirl is around to coat the pan evenly. Add the pancake mixture and wait till the whole pancake starts to firm up (approx 3 minutes-but check underneath it with a spatula)
 
  • Flip with a spatula (quickly) as the mixture is very soft, I like my Nutella melted so I added a teaspoon on top whilst the other side was cooking (took approx 1-2 minutes):
  •   Finally  spread the hot nutella evenly on the pancake, and place it on a place, add the sliced banana and chocolate shavings and you're done!
    This pancake recipe is guilty free and filling and I really urge you to try it. There are so many varieties... you can add dessicated coconut into the mixture or even add some protein powder for a protein pancake.
