Eat Yourself Fit: Part II
Courgette Spaghetti with homemade Turkey Bolognaise |
For a one person serving all you need is:
- One courgette
- Julienne Peeler
The julienne peeler looks like this -->
It can be purchased from here.
Method
- To start, wash the courgette and cut the end and the top off.
- Put the courgette on a flat surface and firmly press the julienne peeler on the courgette; cut it all the way down until you see something that resembles the picture below:
3. When the above process is complete, seperate the 'spaghetti' strands.
4. I used a frying pan (but any pan will do), switch the gas cooker on to low-medium,
5. Put less than half a teaspoon of extra virgin olive oil and black pepper on the pan
then add the separated courgette spaghetti:
4. Cook them for about 5-8 minutes and mix every 1-2 minutes, they are ready when the outside of some strands start to become crispy:That's all that is to it! ! Just eat it as if it is spaghetti, I had mine with turkey bolognaise. This alternative is delicious, nutritious and guilty free!
Note:
- You can skip the cooking stage and eat them raw e.g in a salad, however for hot meals I prefer them like this then they are easier to eat.
- Another great thing about this recipe is that they can also be used as an alternative to noodles not just spaghetti type dishes!
