The Best Chocolate Cheesecake Recipe Ever


I love this cheesecake recipe, the ratio of biscuit to cream cheese is perfect... this recipe is dedicated to Mani who is a BIG dessert lover, please see the recipe below:


Ingredients

150g chocolate digestive biscuits
75g butter or margarine
200g Philadelphia (do not use light/extra light/ or flavoured)
150ml fresh double cream (not extra thick versions)
50g castor sugar
Grate chocolate to decorate

Method
  1. Place biscuits in a plastic sandwich bag and crush using a rolling pin.
  2. Melt the butter in a pan and mix in the biscuit crumbs. Press into a flan/shallow dish (approx. 20cm in diameter) using the back of a spoon. Set for 60 mins (at least)
  3. When the base is set, in a bowl whip the cream until it's thick.
  4. Mix Philadelphia, caster sugar until combined.
  5. Add the mixture into cream and use a spatula to fold into it.
  6. Add the mixture on the base and ensure it is evenly distributed
  7. Decorate with grated chocolate or fresh fruit of your choice.
