Crunchy Noodle Summer Salad With Crisp Vegetables Recipe

 

This salad is perfect for Spring/Summer, the crunchy peanut butter dressing in contrast with the fresh vegetables makes this one a hit with the family. Better yet it only takes 15 minutes to prepare and make, it's SO easy and I really urge you to try it. It can be eaten warm or cold so it's perfect for taking to work/university/school if you're getting bored of sandwiches. This recipe serves up to 6 if you plan to have it as a side dish, but it can also be eaten as a main meal.



Crunchy Noodle Summer Salad With Crisp Vegetables (Serves up to 6)


The Base
  • Chinese medium noodles (325g)
  • One green bell pepper, washed and finely sliced
  • Two spring onions, washed and cut at a diagonal, 
  • Mangetout, 150g washed
  • Broccoli, handful washed and cut into florets.

The Dressing
  • One teaspoon ginger, grated
  • Light Soy Sauce, 3 tablespoons
  • Extra Virgin Olive Oil (by accident I took the grapeseed oil out- oops ^), 2-3 tablespoons
  • Rice Vinegar, 1 tablespoon
  • Natures Energy Meridian Crunchy peanut butter, one heaped tablespoon*
  • One big garlic clove, minced
  • Runny honey, 1.5 teaspoon
Directions

  • Bring a pot of water to the boil (no salt), add the noodles according to the times on the pack, drain and set aside. These noodles only took 8 minutes (inc waiting for the water to boil and cooking time).
  • Simultaneously, put the broccoli in a big enough dish (microwave proof), add a tablespoon of water and cover with clingfilm, put the microwave on for 2-3 minutes (depending on how crunchy you like it).
  • Add the broccoli, mangetout, spring onions and sliced pepper
  • For the dressing, whisk ingredients in a medium bowl, the consistency will be a thick paste. add to noodles and mix (see picture below)
 
This recipe can be modified for example you can put other vegetables in here if you want, use wholewheat noodles or even spaghetti. I should have probably picked vegetables with an assortment of colours but I was trying to use what was in fridge.
