Healthy Indian Salmon Curry

So it's that time again to eat healthily. I really should do this all the time but I get too greedy consuming junk food- oops.

You can make this recipe with any fish, I recommend using Cod or Haddock but I used Salmon on this occasion. There are so many benefits eating this dish, please click here to read my previous post on why a curry is good for you.



Ingredients


  • 500-600g of Salmon, de-boned and left whole
  • 2 Tbsp of Coconut Oil
  • 3 medium onions, finely chopped
  • 1 tsp mustard seeds
  • Half -1 tsp of chilli powder, alternatively fresh chillies finely chopped (depends how hot you like your food)
  • 1 frozen block of garlic, bought from Tesco
  • 2 teaspoons of fresh ginger, grated
  • 1 tsp coriander powder
  • 2 teaspoon Garam masala
  • 2 tsp Turmeric
  • Half-1 lemon, juice squeezed
  • Half a can of chopped tomatoes or three large tomatoes chopped
  • Cold water, used for frying and the sauce (quantity is dependent on how saucy you like it)
  • Salt to taste
  • 2 Tbsp fresh coriander leaves, chopped
Method
  • Heat the coconut oil in a big pan, once melted add the onions and fry until golden. Add ginger and garlic and mustard seeds and fry for a few minutes. TIP: if it starts sticking add a bit of water (forgot to take the picture when I put mustard seeds in)
  • Add spices: coriander powder, turmeric, garam masala, chilli fry for 1 minute
  • Add chopped tomatoes and water so it looks like a soup:
  •  Cook until it has thickened and you can see the oil coming up on the sides, add lemon juice:

  • Now at this stage add the salmon. Whole, is better as you get better portions and this way it doesn't flake all in the curry). 
  • The salmon I used was frozen and wasn't thawed properly, so I switched the gas off and coated the salmon with the sauce to marinate/defrost the salmon (approx 2 hours).
  • However, if you need to make this quickly/ don't want to marinate it/ or if you're using fresh salmon follow the steps below....

  • Add water to the pot (depends how much sauce you want, see main picture at the top of the post) I put approx 2 mugs cold water and only cooked it for 10 minutes, do not mix with a spatula just swirl in the pan (with the lid on)
If you are cooking the salmon straight away then cook for 15 minutes or until  flaky
  •  At the end before serving I added coriander leaves
I made basmati rice and green beans to ensure it was a nutritious meal and presented it differently to the members of the family. You can also sub the rice for quinoa or just have it with veg.
