The Best Chocolate Cheesecake Recipe Ever
Ingredients
150g chocolate digestive biscuits
75g butter or margarine
200g Philadelphia (do not use light/extra light/ or flavoured)
150ml fresh double cream (not extra thick versions)
50g castor sugar
Grate chocolate to decorate
Method
- Place biscuits in a plastic sandwich bag and crush using a rolling pin.
- Melt the butter in a pan and mix in the biscuit crumbs. Press into a flan/shallow dish (approx. 20cm in diameter) using the back of a spoon. Set for 60 mins (at least)
- When the base is set, in a bowl whip the cream until it's thick.
- Mix Philadelphia, caster sugar until combined.
- Add the mixture into cream and use a spatula to fold into it.
- Add the mixture on the base and ensure it is evenly distributed
